BUTTERFLY PRAWNS IN KERALA SPICES

Ingredients :
Tiger prawns - 8 nos.
Salt - to taste
Coconut oil - to fry
Curry leaves - chopped, few
For marination paste:
Red chilly powder - 4 tsp
Ginger - 1 small cube
Black pepper kernels - 1 tsp
Fenugreek seeds - 1/2 tsp
Turmeric powder - 1/2 tsp
Garlic - 10 cloves
Curd - 3 tsp
Instructions :
1. In a blender, add the ingredients to make the marination paste. Blend thoroughly to get a smooth paste. Add salt and chopped curry leaves. Mix well.
2. Butterfly the prawns: Wash the prawns well. Cut them in half lengthways and flattening them out. Uncurl the prawn, belly-side facing upwards.Cut a line from the head of the prawn to its tail tip, making sure it cuts through the meat but not the outer shell of the prawn.Open up the prawn fully. De-vein the prawns and clean out the mustard.
3. Marinate the prawns with the masala paste. Keep it aside for 30 minutes.
4. In a hot pan, add oil. Slide the prawns with the marinated side down. Cover with a lid and cook. When cooked flip the prawns. Fry until it cooks well, at a low or medium heat.
5. Butterfly prawns is ready. Serve hot !!!
