GOLI BONDA AND POTTUKADALA (roasted gram dal) CHUTNEY

Ingredients :

For Goli Bonda:

 Maida - 1 cup

 Ginger  -  1 tsp, finely chopped

 Garlic -  1 tsp, finely chopped

 Green chilly - 1 tsp, finely chopped

 Curry leaves -  1 tsp, finely chopped

 Asafoetida - a pinch

 Baking soda - 1/2 tsp

 Black pepper - 1/2 tsp, crushed

 Curd - 1 cup 

 Salt - to taste

For roasted gram dal chutney:

 Roasted gram dal - 1/2 cup

 Grated coconut - 1 tbsp

 Green chilly - 3

 Ginger - a small cube

 Garlic - 1 clove

 Tamarind - as required

 Mustard seeds - 1/2 tsp

 Dried chilly - 2

 Urad dal - 1/2 tsp

 Curry leaves - as required

 Coconut oil - 1 tbsp

 Salt - to taste

 

 

Instructions :

For Goli Bonda:

1. Make batter: Mix together all the ingredients required for the bonda. Mix the batter vigorously with a fork until you get a smooth fluffy and airy batter.

2. Rest for 15 minutes.

3. Fry the batter: In a hot pan, add oil. When hot, slide the batter portions slowly into the oil. Flip occasionally. Fry until brown, at a low or medium heat to get a crispy crust and soft inside.    

 

For Pottukadala/ roasted gram dal chutney:

1. Grind the pottukadala, coconut, green chilly, ginger, garlic and tamarind to a smooth and fine paste. Add salt to taste.

2. For Tadka: In a tadka pan, add oil. When hot, add the mustard seeds, dried chilly, urad dal and curry leaves. Give a quick stir and add to the chutney.
